Like Potato, tara root is another yummy vegetable most of us would love to make a stir-fry or a roast. Its very easy and quick to cook tara root and so delicious too. Most of us love to make a crispy roast out of this seppangkizhangu. The roast is always nice to have it hot or warm. But if we try to pack it for lunch, it will become less crispy and also will be more dry. But this Seppangkizhangu vathakal is a soft and tasty side dish that goes well with many conventional rice varieties like lemon rice, tomato rice, etc., and also with conventional sambar/ kuzhambu varieties. Few tips to make best tasting Seppankizhangu Stir Fry

  1. Usually we pressure cook the Seppankizhangu first and then we make the seppankizhangu stir fry. But in this recipe, we are cooking them directly. To enable quicker and uniform cooking, we need to chop the Kizhangu in to smaller pieces.
  2. Try to cook them  preferably in the non-stick pan. With non-stick pan we need very less oil to cook this stir fry. However if you don't prefer non-stick pan, use the heavy bottomed pan. You may need slightly more oil to cook in the heavy bottomed pan.

Seppankizhangu (Arbi / Tara Root) is a popular root vegetable. The stir fry made using Seppankizhangu is very tasty. This can be made using many variations depending on individuals taste and liking. The recipe given below is one of the most simplest method of making Arbi stir fry

Ingredients

  • 300 grans Tara Root (Seppangkizhangu / Arbi)
  • 2 tablespoon Cooking Oil
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon Sambar Powder
  • 1½ teaspoon Salt adjust to your taste

For Tempering

  • 1 teaspoon Cooking Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Split Urad Dal
  • 1 sprig Curry leaves

Instructions 

Preparation

  • Wash the tara root thoroughly. Peel the skin of the Tara Root and chop them into small pices. As we are going to do the stir-fry it's important to chop them into smaller pices to ensure quick and uniform cooking

Start with Tempering

  • Heat oil in a pan. Once the oil is heat add mustard seeds and allow it to sputter. Add split urad dal and fry till the dal turns golden brown. Finally add the curry leaves and fry it for few seconds in the oil

Making of Stir fry

  • Add the chopped tara root. Add one tablespoon of oil and mix well. Add turmeric powder, sambar powder and give a good stir
  • Cover the pan and allow it to cook in the medium flame. Check intermittently if the tara root has cooked well. For me it only took 5 minutes to cook.
  • Once it's cooked, add another table spoon of oil and mix well. Simmer the stove and allow it to cook for another 5 more minutes without covering the pan. This will help to get the tara root more crispier.
  • The delicious Seppangkizhangu Vathakal is ready to serve!

  1. You can also add a tablespoon of thick tamarind juice which reduces the stickiness of the Arbi.

  • Stir all of them so that the masala get mixed finely with the vegetables

  • Cover the pan and allow it to cook in the medium flame. Check intermittently if the tara root has cooked well. For me it only took 5 minutes to cook.

  • Once it's cooked, add another table spoon of oil and mix well. Simmer the stove and allow it to cook for another 5 more minutes without covering the pan. This will help to get the tara root more crispier.
